Chicken Tortilla Soup

It is officially soup season. I am not sure where this weather came from, but I am so glad the cooler weather has rolled in. This cooler weather is definitely a call for a good bowl of soup. I really enjoyed this one and I hope you all will as well.

This is another easy crockpot recipe that allows you to throw in all the ingredients and walk away. This recipe includes:

  • 3 chicken breast
  • 1/2 onion
  • Black beans
  • Corn
  • Bell peppers
  • Fire roasted tomatoes
  • 2 cups Chicken broth
  • Garlic

The recipe calls for cilantro, but I am pretty sure nobody actually enjoys eating cilantro. I always omit when I see it. If you do enjoy cilantro…. then more power to you. To season you use Cumin, Chili powder, and salt. To top it all off, throw some cheese on top and let it melt and then add some tortilla strips for a little crunch.  I didn’t include exact measurements because you can kind add more or less of certain ingredients if you want. With the amount of ingredients I used it was more of a chunky soup, but that is what I wanted so I was happy with the outcome.

All you need to do is throw this in the crockpot on low for 5+ hours. You can cook on it on the high setting, but I personally think low is better and the food gets cooked better. The only “bad” thing with a crockpot is that it tortures you with having to smell the delicious food knowing it isn’t ready until that timer goes off.

This meal turned out to be delicious and if you are a lover of soup like me, then you should definitely give this recipe a try.

  2. Ryan and Paige, cilantro is literally the most delicious spice. What do you think make salsa so delicious? I mean I am not going to snack on it like celery, but it adds great flavor to dishes.
