Crockpot Tacos

I can almost guarantee these crockpot tacos will be the best tacos you have tried. My mom makes these all the time and I decided to give them a go for myself. I learned a few things the hard way, but in the end they tasted great and that’s all that counts.

What you need to make these tacos are: makes approximately 12 tacos

  • 3-4 chicken breast
  • 1 packet of taco seasoning
  • 1 packet of powdered ranch seasoning
  • 1/4 cupSalsa
  • 14 oz Fire roasted diced tomatoes
  • Cheese
  • Taco shells

These tacos are super simple to make, anyone can make them. All you need to do is put all the ingredients into a crock pot and let them cook on low for 5+ hours. The best thing about a crockpot is you don’t really have to worry about cooking. You can put the chicken in the crockpot and then go to class, workout, or whatever it may be.

This recipe isn’t the fastest option, but the simplicity of it makes up for the time. Once the chicken has been cooked in the crockpot, you take two forks and shred the chicken up. You then take the chicken, load them into the taco shells and put them on an oven tray. Once they are on the tray you top the tacos off with cheese. The oven should be preheated to 350 degrees and let them cook for 10 minutes. Once they are done, enjoy!

Mistakes I made while making this meal. First off, soggy taco shells. When you make this meal there will be a ton of liquid in the crockpot from the chicken and everything else you put in there. When you load the chicken into the shells, make sure you let the liquid drain off the chicken beforehand. If you don’t your taco shells will become soggy and they will fall apart. Secondly, place parchment paper on the oven tray and then put your tacos on the paper before cooking. This will make clean up a breeze and prevent your tacos from sticking. I made the mistake of using foil on the tray and the tacos stuck to it and then I was left with bottomless taco shells. NOT FUN.

Overall this meal turned out amazing, and I would definitely suggest it to anyone who loves tacos. Also, sorry for such a lame picture of the tacos, I totally forgot I cooked these for the blog and my girlfriend and I devoured them before I could get a good picture of them all. So far, these tacos have been my favorite meal I have posted.

  1. Tacos are one of my favorite things to eat, so thank you for sharing this recipe. It seems like a very simple recipe since you don’t really have to pay much attention to it while it’s cooking. Would be great for me since I usually have a lot of stuff to do. They look delicious and I will definitely have to try making them one time.
